Whole Boned & Rolled Pork Shoulder

The perfect Pork roast, crunchy crackling, is there much better for bit family dinner? This whole boned and rolled shoulder will be perfect for that.

With cooking, make sure to score the fat but not so deep it gets to the meat, from here apply a small amount of olive oil and liberally apply salt to the fat and into the score marks. Make sure the oven is preheated to 220* and cook for 30mins, then bring heat down to 180 and cook until the juices run clear, a good guide is to start with two hours and go from there, depending on thickness.
