An often overlooked cut of pork due to it often being overcooked, but when done right they are fantastic and juicy. The way to make this work is sit them in brine for a while before cooking, anywhere between 30mins and 4 hours will help.
Cooking, try the same way a ribeye steak is cooked, seared off in a hot pan and then finished in the oven for a more consistent cook.
