A delicious premium cut full of flavour. The key to cooking here is the salt and pepper at the start of the cook, it will make sure the skin drys out and crackles. Score the top of the skin and liberally rub salt and some pepper over the top and into the score lines. To start cooking roast at 220* for 30 minutes, then bring temperature down to 180* and cook for a further 90minutes, depending on thickness. Let stand after taking from the oven for 15mins
