Frozen Lamb Rack

Frenched Lamb racks, there is only a very small amount of fat left on these meaning they are ready to go for what ever you feel. They are beautiful roasted, barbequed or cut down to cutlets.

Like with steak, a hot pan is the best way to start, season the rack and then render the fat for a short time and then finish off in the oven. Remove from the oven and cover for 5 mins and then serve.
